Our Traditions
How does one recreate the soul of traditional Beijing roast duck in Tampa?
It begins with precision—air inflation, blanching, and sugar glazing.
Each duck is cold-air dried for 24 hours, allowing the skin to tighten and the flavor to concentrate.
Then it is slow-roasted over fruitwood in a traditional hanging oven,
where gentle, even heat works its quiet magic.
The skin turns amber and glossy,
its rendered fat transforming into a delicate, glass-like crispness,
while the meat stays succulent yet never heavy.
Carving is an art of its own—slice by slice, impossibly thin and intact.
Served with hand-rolled lotus-leaf pancakes, sweet bean sauce, julienned scallions, and cucumber,
each bite is a living tradition that has traveled across continents to arrive whole.
If Peking duck is a feast, then soup dumplings and handmade dumplings are the language of home.
Handmade Dumplings
From heritage pork, chicken, and seasonal vegetables
to freshly peeled shrimp, each filling is whipped with house-made stock.
The wrappers are paper-thin yet resilient,
sealing in an abundance of natural sweetness and umami.

Xiao Long Bao
(Soup Dumplings)
Crafted following the classic “eighteen-pleat” method,
filled with finely selected heritage pork and warmth,
bound together by a rich aspic made from slow-simmered bone broth.
